Meatloaf

2 lbs. ground beef or turkey
1 egg
½  c. almond flour
2 grated carrots
2 tbl. tomato paste
1 tbl. fish sauce
¼ tsp. dried thyme
2 medium onions, chopped
2 tbl. coconut oil
salt and pepper, to taste

Preheat oven to 325.
Saute onions in coconut oil over medium heat with thyme, salt, and pepper for about 10 minutes, adding carrots for the last couple minutes.
Add fish sauce and tomato paste and mix thoroughly.
Cool mixture to room temp.

Combine meat, egg, almond flour, and carrot mixture.
Shape into a loaf inside your baking dish.
Bake for 1 to 1 ½ hours until the internal temp reaches 160.
Let rest for about 15-20 minutes before serving.
